Wuyi Shan Shui Hsien
When it comes to the subject of Oolongs, this is the kind of tea that I simply adore – a well roasted strip Oolong from the famous Wuyi Shan mountain area in Fujian Province on the Chinese mainland.

The spoon scraped hard against the bottom of the caddy. The “cheap but good enough as a palate cleanser and general digestive system degreasant” Golden Sail brand shou Pu-erh was all gone. Oh.

Grandpa Style
If the gong-fu style of tea preparation, with its elaborate equipment, detailed methodology, and precise amounts and temperature control represents yin, then its yang can be thought of to be the “Grandpa style” method of steeping tea leaves.
